Fast and Fun Superbowl Snacks!
What’s your favorite snack for the Super Bowl? Wings? Pizza? Nachos? Pigs in a blanket? I mean, aren’t the snacks half (at least!) the fun?
If you get a last minute call for a party, or you are just chilling at home and want something a little more special, check out one of these faves of mine!
Buffalo Cauliflower Bites (Recipe courtesy of @TraderJoesList on Instagram)
3 Bags TJ’s Cauliflower Gnocchi
1/2 c. Buffalo Wing Sauce of your choice
12 c. Olive Oil
1/4 c. Nutritional Yeast
2 tsp Garlic Powder
1 tsp Cumin
2 tsp Paprika
2 tsp Salt
Preheat Air Fryer at 390 for 5 minutes. Mix dry ingredients in a large bowl. Pour in all the gnocchi (still frozen, just make sure they’re separated.) Pour olive oil over, and toss till fully coated.
Spread gnocchi on racks or basket (you can also bake in oven at 400). Cook for 10 minutes until crisp. Toss/ turn, and cook for another 10 minutes. When crisp, and resembling tater tots, remove to bowl and toss with sauce, lightly. Return to air fryer for 6 minutes or so, until they’re as done/ crisp as you like.
Serve with celery and blue cheese dressing/ dip or ranch.
Easy Hot Artichoke Dip
I ALWAYS have these ingredients ready!
1 can or jar of Artichoke Hearts, drained and rinsed
1 cup Mayonnaise
1 cup Grated Parmesan Cheese
1 clove Garlic, minced
Preheat oven to 350 degrees. Stir all ingredients together and put in a small casserole dish. Bake uncovered 25 minutes or until heated through.
*You can also add thawed, drained 10 oz package of spinach, 6 oz. of drained crabmeat, 1/2 cup of mozzarella and 6 oz of chopped sun dried tomatoes for an Italian flair… So many options!
